Golden Kiwi Muffins
What is better than the smell of freshly baked muffins? Or the way farm butter melts into a warm baked muffin? We love the newly harvested Golden Kiwi’s and had to get new, unique ways to incorporate this golden fruit into our baking! These muffins have a delicious, sweet taste with a hint of cinnamon. They are light, moist, easy to bake and has a beautiful golden hue to them.
This recipe will surely impress those around you and can be served as a breakfast muffin or a teatime surprise. This recipe takes about 40 minutes and makes 10 large or 12 medium muffins.
What You need
1 cup All-purpose Flour
½ cup Sugar
½ tbsp Baking Soda
1 tbsp Baking Powder
½ tbsp Ground Cinnamon
1 tbsp Ground Allspice
Salt
½ cup Vegetable Oil
½ tbsp Vanilla Extract
½ cup Whole Milk
2 tbsp Melted Butter
2 Fresh Kiwis (peeled and chopped)
½ cup Raisins
Preparation Method
Preheat the oven to 180 degrees
In a bowl, combine all the dry ingredients
In another bowl, mix all the wet ingredients: beat the eggs, butter, vanilla extract, and milk.
Mix wet and dry ingredients. Whisk until the ingredients are nicely combined.
Fold in pureed Kiwi and raisins.
Fill the paper-lined muffins tin ¾ full and sprinkle with sugar and cinnamon.
Bake at 180 degrees for 15-20 minutes.
Muffins are done when slightly golden or brown.
Once baked, let the muffin cool for 10 minutes and transfer it to a wire rack.
Dust it with sugar and enjoy it.
Other Suggestions
Add nuts to your mixture.
You can remove the raisins.
You should mash the kiwi fruit smoothly by using a blender or food processer
Line your muffin tin with paper cupcake liners to prevent the muffin from sticking to the containers.
You can substitute the milk with oat milk, coconut milk, or almond milk.
